Happy Fall! Soooo many delicious crisp red apples! Already we have made an apple pie and applesauce and have enjoyed tons of apples for snacks. Still have plenty. Let’s make some apple… bread! Gluten-free, refined sugar free, so delicious and healthy as we’re using Teff flour this time. The apples and some maple syrup will help sweeten this breakfast or snack treat!

Put this girl to work helping make some amazingly healthy Teff Apple Bread! You will need the Teff flour, cinnamon, nutmeg, coconut oil, maple syrup, eggs and apples.
To begin, line your baking pan with coconut oil and sprinkle a bit of the teff flour on it so for easy removal. Add melted coconut oil to maple syrup, vanilla and eggs in mixing bowl. In a separate bowl, mix together the dry ingredients. Combine. Then add the diced and shredded apples and mix but I like to leave chunks of apple visible. It is, afterall, apple bread.
About that Teff flour. A naturally gluten-free healthy grain, some even call it a superfood! It’s a great source of fiber, protein, iron, vitamin C, and more calcium than all other grains including quinoa! Fantastic source of essential amino acids, so good for the immune system as well as healthy bones, pairing it along with apples makes for a fantastically Well-Fed treat! It’s up to 40% resistant starches and has a low glycemic index (GI) rating, great for a snack to keep blood sugar level as it releases sugar more slowly into the blood stream.

Pour into baking pan and bake for about 35-40 mins at 350F
When it is finished, I mixed together cinnamon with a bit of almond flour and a touch of maple syrup to make a sweet crumbly topping, totally optional. The bread itself, so delicious! Perfect pairing with coffee on a fall cool crisp day! Nutritiously deliciously Well-Fed for Your Whole Well-Being!

- 2 c teff flour Can also use any gluten-free paleo, coconut or almond flour
- 1 tbsp cinnamon
- 1/2 tsp sea salt
- 1/2 tsp baking soda
- 1/4 tsp nutmeg
- 2 pasture-raised eggs
- 1/4 c melted coconut oil
- 2 tsp pure madagascar vanilla
- 2-3 medium apples cut and also shredded to get a great amount of apple throughout the bread. Chunks and pieces.
- 1 tbsp pure maple syrup

- Line your baking dish with melted coconut oil and a bit of almond, coconut or teff flour for easy bread removal when bread is baked and ready to be removed.
- Heat the oven to 350°.
- Combine teff flour, cinnamon, salt, baking soda and nutmeg to a large bowl.
- In separate mixer bowl, combine eggs, melted coconut oil and vanilla and blend until combined
- Pour flour mixture to wet ingredients and allow to blend.
- Peel, core and dice two apples. Shred the other. Fold and mix the apple into the batter. You'll see apple chunks which is good as you'll have those in the baked bread.
- Scrape the batter into the greased loaf pan Bake for 30-35 minutes, or until a toothpick inserted in the center of the loaf comes out clean.
