  1. Line your baking dish with melted coconut oil and a bit of almond, coconut or teff flour for easy bread removal when bread is baked and ready to be removed.
  2. Heat the oven to 350°.
  3. Combine teff flour, cinnamon, salt, baking soda and nutmeg to a large bowl.
  4. In separate mixer bowl, combine eggs, melted coconut oil and vanilla and blend until combined
  5. Pour flour mixture to wet ingredients and allow to blend.
  6. Peel, core and dice two apples. Shred the other. Fold and mix the apple into the batter. You’ll see apple chunks which is good as you’ll have those in the baked bread.
  7. Scrape the batter into the greased loaf pan Bake for 30-35 minutes, or until a toothpick inserted in the center of the loaf comes out clean.
