Using a whole pineapple, cut the sides off to use as pineapple “planks”! I baked this example recipe, but this is soooo good and even more “summery” made on the grill! Place a lean mild flaky fish such as Pollock, Red Snapper, Haddock or Cod on top of each pineapple plank. It can be challenging navigating healthy fish and how to buy, trust me!! Trying to keep afloat of what is correct and apply my nutrition knowledge I can feel like a fish out of water! But where it is sourced makes a great deal of its nutritional value. Wild-Caught is best! Look for sustainably sourced labels when purchasing or ask the fish market themselves. I am lucky because I am able to get fish right from the Fulton Fish Market in NYC, straight from the boat often never previously frozen!
Pineapples are fantastically nutritious, being one of the top fruits I recommend for anti-inflammatory foods!

So go ahead and cut the rest of that healthy delicious pineapple fruit up into dices and mix with red, orange and yellow sweet peppers, also diced. Red onion if you prefer, but also be sure to add some fresh tomato, avocado, a bit of olive oil and lime juice, then fresh parsley and/or cilantro and you have your nutritiously well-fed pineapple salsa!
I then sprinkled each fish fillet with a bit of oregano, a touch of garlic powder and a touch of butter, but not too much. For this recipe I baked the fish, so I did place foil over top of the tray I placed the pineapple planks on. I like to use foil while cooking fish as it helps steam the fish! On the grill, I just placed each pineapple plank right over the flame!

- 1-2 pounds fresh wild caught white mild flaky fish pollock, red snapper, cod, haddock
- 1 whole pineapple
- 3-4 small red, yellow, orange sweet peppers cut and diced
- 2 medium fresh tomatoes cut and diced
- 1/4 medium red onion cut and diced
- 1/4 bunch fresh cilantro and or parsley cut and diced
- 1/4 tsp cumin
- 1/2 avocado diced
- 1/2 tbsp extra virgin olive oil
- 1 fresh lime juice squeezed
- 1/2 tsp oregano
- 1 tbsp butter divided to place slivers on each fish fillet
- 1/2 tsp himalayan sea salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder

- Preheat oven to 395F or preheat grill
- Cut each side off whole pineapple, thick enough to use as planks for fish fillet, but not left with too much fruit either
- Place planks onto baking sheet if using oven.
- Place fillet onto each pineapple plank
- sprinkle with oregano, garlic powder, a bit of salt and pepper and then a sliver or so of butter on each
- cover with foil if you prefer
- Place in over or over grill.
- Bake/grill for about 9 - 11 minutes.
- Cut remainder of pineapple fruit into diced pieces. Place in bowl
- Combine Pineapple with cut and diced peppers, tomatoes, red onions, avocado
- Add olive oil and fresh lime juice along with herbs and stir. When Fish is finished and ready, pour salsa over fish and serve!
