Ingredients

fresh wild caught white mild flaky fish
pollock, red snapper, cod, haddock

pineapple

red, yellow, orange sweet peppers
cut and diced

medium fresh tomatoes
cut and diced

medium red onion
cut and diced
1/4
bunch
fresh cilantro and or parsley
cut and diced

extra virgin olive oil

fresh lime juice squeezed

oregano

butter
divided to place slivers on each fish fillet

himalayan sea salt

garlic powder
Instructions
Preheat oven to 395F or preheat grill
Cut each side off whole pineapple, thick enough to use as planks for fish fillet, but not left with too much fruit either
Place planks onto baking sheet if using oven.
Place fillet onto each pineapple plank
sprinkle with oregano, garlic powder, a bit of salt and pepper and then a sliver or so of butter on each
cover with foil if you prefer
Place in over or over grill.
Bake/grill for about 9 – 11 minutes.
Pineapple Salsa
Cut remainder of pineapple fruit into diced pieces. Place in bowl
Combine Pineapple with cut and diced peppers, tomatoes, red onions, avocado
Add olive oil and fresh lime juice along with herbs and stir. When Fish is finished and ready, pour salsa over fish and serve!
