*If you’re watching the video above, I say “Add the egg, or you don’t have to, you can keep it dairy free” I meant to say “Egg-free” as some can eat chicken and not eggs. On that note, you also can keep the chicken meat out as well, if you’re using bone broth however, it would not be a vegan or vegetarian meal. You would obviously need to make a vegetable broth.*
Ahhh… the great go-to when we’re feeling a bit “under the weather”. A nice warm bowl of Chicken Soup! And right now a healing go-to is exactly what many need! It’s not just the season of head colds and coughs, but also the dreaded and potentially dangerous flu season! So many illnesses are running rampant throughout schools and homes. With outside being cold and windy, sometimes snow and wet, a nice warming comfort bowl of soup seems to do us wonders! Why is Chicken Soup known as such a powerful healing food-as-medicine choice? To begin, you need a great, healthy, bone broth! That’s the base of the soup! Click to read all about how fantastic Bone Broth is for your health and wellness and how to make it yourself, in my previous blog Homemade Bone Broth – A Healing Elixir! The bone broth is where the soup’s super nutrition really gets its start! Well, to be exact, it actually begins with the chicken being pasture-raised! After making and enjoying your Whole Roasted Chicken you must save your bones, and from there you’ve got your healthy chicken, packed with minerals, vitamins, antioxidants. Simmer the bones pulling out all the healthy nutrients like collagen and glycine, creating your healing elixir of bone broth!
**On an important note, if you are feeling very ill, taking care of yourself extends beyond eating nutritiously healthy foods, getting some good sleep and drinking water —-> you need to also go to the doctor! Having the flu is not something to scoff (or cough) at.**
You’ve got your healthy tasty broth, now we’re just going to add some nutritional yumminess to it! And some extra protein!
Slice your chicken meat from the leftover Whole Roasted Chicken. You can also simply use grilled chicken breast!
Next, we’re adding more nutrition! Starting with some celery, then carrots, sweet potatoes and red onion!
Notice a trend in all the infographics below? Each one has the benefit of IMPROVING IMMUNITY! We’re adding immunity boosting vegetables to an already nutrient packed bone broth! And the first word in the name of the soup, Chicken, is packed with protein, full of amino acids that support and power your immune system! No wonder soup is the go-to! Plus, in this recipe, we’re adding more protein by using eggs for noodles!! Full on Immunity improving, boosting soup! (Each graphic was found via Pinterest respectfully! Great graphics! Soon I will create my own infographics. That’s my goal, one of many.)
Additional ingredients are about 2 tsp fresh thyme or you can used dried, which would be less, about 1/2 tsp; 3-4 eggs and about 1 tbsp parsley. This recipe inspiration comes from www.coconutmama.com a fantastic site loaded with tons of great recipes! I changed it up a bit adding the sweet potatoes and less parsley. The recipe there calls for coconut oil, which is awesome, but you can also use olive oil !
Add the oil to heat in a dutch oven pot, then add celery, carrots, onions and sweet potatoes. Cook until soft.
Add some fresh thyme or dried thyme, whichever you may have. I had some great thyme grown from our garden, saved and dried it, and it went fast!
Then also add the chicken bone broth and the chicken meat, and let simmer.
While all the ingredients are simmering for about 15 – 20 minutes, grab 3-4 pasture-raised eggs and lightly beat together in a separate bowl, eventually slowly adding them to the soup! Egg noodles and extra protein!!!
And there it is, a very tasty nutritious powerful immune boosting chicken soup! A protein-filled flavorful well-fed meal for your well-self, your wellness, your Whole Well-Being!
Again, if you or your children or anyone is feeling very achy and ill and just not getting better, don’t hesitate to go to the doctor! Self-care is important; it isn’t simply eating healthy, staying hydrated with fresh water, getting sleep/rest, staying clean (take a bath/shower to get others’ germs off of you! And put on fresh clean clothes and use fresh clean sheets!!) but also knowing yourself, knowing your body and recognizing when an illness needs to treated medically! Feel Well.
