Ingredients

tbsp
coconut oil or olive oil
1-2
celery
sliced
1-2
carrots
sliced

Red Onion
1/2-1

Sweet Potato
peeled and sliced and diced

tsp
fresh thyme
or 1/2 tsp dried thyme

quarts
homemade bone broth
chicken bone broth

chicken
shredded or cut they way you prefer

parsley
added towards end of cooking

lightly beaten
Instructions
Add oil to dutch oven pot, heat on med-high, then add celery, carrots, sweet potatoes and onions. Saute until soft.
Add thyme then chicken bone broth and chicken meat. Let simmer on medium for 15-20 minutes.
After lightly beating eggs in separate bowl, slowly add to warm soup to create egg noodles
Add parsley and serve!
