  1. Add oil to dutch oven pot, heat on med-high, then add celery, carrots, sweet potatoes and onions. Saute until soft.
  2. Add thyme then chicken bone broth and chicken meat. Let simmer on medium for 15-20 minutes.
  3. After lightly beating eggs in separate bowl, slowly add to warm soup to create egg noodles
  4. Add parsley and serve!
