I’ve been on an egg kick and I feel eggcellent about it! Not only because eggs are a great source of protein and have numerous health benefits but also because where I live I can easily pick up farm-fresh pasture-raised eggs, produced from very happy hens!
There is a difference when choosing organic vs cage-free vs free-range vs pasture-raised! Just as we have found that Beef is healthiest when it’s 100% Grass-Fed Beef and salmon is healthiest if it’s Wild-Caught Salmon, the same goes for poultry! I mentioned in my previous post that Pasture-Raised Chickens are the healthiest and happiest hens, being free to eat greens and natural insects and thrive in the sunshine and fresh air. The eggs produced by such happy and healthy hens are the healthiest with the highest nutritional content. I pick up our local eggs from the Farmer’s Market! I love eggs cooked so many ways; boiled, omelets, eggs over-easy, eggs baked and now I’ve taken many attempts at making my own poached eggs!
This is an easy meal that requires nothing added to the egg! No spray or olive oil or butter! Just water simmering. No vinegar needed in the water either! Just have a great, fresh, pasture-raised chicken egg and the taste is perfect!
I’ve seen pics of the eggs being put in plastic wrap. That probably keeps the egg whites more together with the egg, but I don’t buy plastic wrap because it bothers me. I don’t like it. I feel like my kids are going to secretly play with it and suffocate and I feel like it hurts the environment. I have also seen eggs put into small cups and then place in the hot boiling water, that might be something I give a try so I can be sure to have a good amount of the egg whites with my eggs! But you should note that the yolk provides protein too!

For now, I begin with a deep sauteing pan that will allow me to add a good amount of water so the egg can be mostly submerged. Heat the water but only to a simmer, not boiling as the boiling water, the bubbles, will push the egg around and beat it up! You’ll end up with beaten eggs, not poached! It’s taken me a few times to get the eggs perfect and looking good but they always taste good! I have a problem with the whites completely covering the yolks, but that’s why I keep trying!
Add your egg to a mug or small cup. Break the egg open and pour in cup.
Then gently add the egg to the simmering water.
Allow the egg to float in the simmering water.
Three times a charm!
I would gently take the egg out and softly touch the top to see if it’s a good consistency, not too soft but not overly hard or cooked.
Add eggs over power greens! Baby spinach and baby kale!
There’s my eggs over my power greens! You can have them plain like this or sprinkle a bit of oregano or parsley over them.
As a complete protein packed dinner, I added sauteed garlic, broccoli and chorizo (sauteed lightly in olive oil only). I also added a bit of goat cheese as well for a nice added kick of flavor and squeezed some lemon juice over everything! Poached dinner perfection!
This was my dinner one evening as Kali watched Moana on repeat. Glass of Cabernet and I was so happy! Who knows How Far I’ll Go after eating such power meals!

- 2-3 pasture-raised eggs
- 2 cups power greens of baby spinach and kale
- 1 lemon squeezed
- 1 dash oregano or parsley
Ingredients

- Simmer water in sauteing pan over medium heat.
- Crack egg gently into mug or cup.
- Slowly pour egg into simmering water and allow to cook for a few minutes, checking the consistency of the egg by softly touching the top after about 4-5 minutes.
- Remove egg from water with straining spoon and place over power greens. Squeeze lemon juice over and add dash of oregano and parsley! Enjoy!
