Sweet potatoes are one of my favorite side-dish options. I do love a good dose of vegetables, but sometimes I want a bit of something else. Rather than choosing pasta or a regular potato, the sweet potato is great. I sometimes sauté it in olive oil with red onions and herbs or just enjoy it simply baked. But a great side item for summertime bbq or during a Saturday evening while watching the Supercross race are these baked garlic and herb sweet potato fries!
Sweet potatoes are a bit of a healthier option than white potatoes (but don’t let me scare you away from adding a regular baked potato to your dinner as a side.)
Sweet potatoes are paleo.
Sweet potatoes may look like yams, but sweet potatoes have more nutrition than yams, so double check that you’re grabbing some of that sweet!
For these baked garlic and herb sweet potato fries, I sliced them up long ways in easy to eat sections.
But I also like to do a few as rounds, they’re both great! Thinner will make for crispier results!
Place in a bowl and coat nicely with olive oil.
I have found if you transfer back and forth from one bowl to another, it helps the olive oil coat each piece!
Add chopped fresh garlic
Sea salt, parsley and I use an organic Italian Seasoning blend that consists of oregano, basil, marjoram, sage and garlic. It’s the perfect combination and has no secret additives or sugar.
Place on a baking sheet lined with foil and spread them apart nicely so they all bake well.
After baking in oven at 400F for about half an hour, I like to move them around and perhaps even flip them. Continue baking for another half an hour. I’ll do a taste test to see if they’re at the tenderness that I prefer. Let cool a bit, and serve in a clever display so everyone knows how awesomely sweet you are!!

- 2-3 sweet potatoes sliced long ways or round
- 1-2 tbsp olive oil
- 2-3 cloves garlic diced
- 3 tsp Italian Seasoning or
- 1 tsp oregano
- 1 tsp basil
- 1/2 tsp majoram
- 1/2 tsp sage
- 1/2 tsp garlic salt if prefer
- 2 tsp sea salt or more if prefer
- 1 tsp parsely

- Preheat oven to 400F. Slice sweet potatoes. Place in bowl and add olive oil, allowing to coat each potato but not too much, enough so herbs stick to potatoes. Sprinkle herbs and diced garlic onto potatoes. Arrange on baking sheet lined with foil. Bake at 400F for about half an hour, move around and/or flip. Bake for another half hour or hour to desired crispiness.
