Preheat oven to 400F.
Slice sweet potatoes.
Place in bowl and add olive oil, allowing to coat each potato but not too much, enough so herbs stick to potatoes.
Sprinkle herbs and diced garlic onto potatoes.
Arrange on baking sheet lined with foil.
Bake at 400F for about half an hour, move around and/or flip.
Bake for another half hour or hour to desired crispiness.
