WELL-FED Shrimp Lettuce Taco – Low-Carb, High-Nutrition!

It’s finally spring, getting into some warmer days! That means bring on all the different meals being some type of taco! Let’s welcome these Shrimp Lettuce Tacos. They don’t have the traditional hard taco shell, as fresh romaine lettuce is used in place to hold a bounty of vegetables. There is a black pepper and turmeric cauliflower rice to begin as the base (rather than traditional rice), a super-food slaw combo of shaved kale, brussels sprouts and cabbage, then a cumin-lime (and you can make it spicey for sure) shrimp is added for some hi-protein. Dollop a bit of cumin cilantro yogurt sauce and toss a few sprouted greens on! Nutritiously Well-Fed Summer YUM.

Just enough added to each piece of romaine so to make it easy to pick up and gobble down.

I always make the cauliflower rice first and I always use a fresh head of cauliflower. The bagged stuff just isn’t the same and to be honest, smells like farts when you open it. #fartbag So get a great, fresh white head of cauliflower and start shredding sections of it into a pan. I’m even eating pieces of the cauliflower as I shred to taste it’s freshness. Gotta be good.

Next add some sliced red onion, 2-3 tsp of turmeric and a tbsp of coconut oil.

To help the turmeric absorb, and to add great flavor, add a tsp or two of black pepper!

Stir it together and cook over a medium heat.

Next, begin sauteing the shrimp, using coconut oil giving the shrimp a great summery flavor while also providing well-fed nutrition of healthy fat.

The herbs and spices I used for the shrimp are cumin, garlic powder, oregano and you can add a touch of chili powder and/or paprika. I squeezed a fresh lime as well I had a jalapeno that I squeezed over them which is optional, give it a spicy kick. Cayenne would be a great spice to add here for some heat!

The superfood slaw is something I found ready made in a bag, which I usually am picky about buying such items. But this I found was a good quality, fresh when I opened it and I ate a bit raw to double check, it was good! Pour into a bowl and add some fresh squeezed lime and/or apple cider vinegar as well as a few of the same herbs and spices above if you like, or you can keep it simple and raw and just add it to the lettuce taco.

The video shows a few of the ingredients I am using for this recipe and I happened to find Organic SKYR, a great yogurt I found at a farmer’s market.  I held up the honey version not realizing this might be confusing. The honey Skyr was what Kali was eating at the time, but I always use plain when making any yogurt sauce, which is the white and blue container. I copied and pasted the nutrition value of SKYR  to show you the impressive nutrition benefits! Any grass fed, whole-milk, probiotic filled high protein yogurt will do! This was good, Stoneground and Fage are also favorites. A local dairy farm is always a great choice, which around my area I love Freedom Hill Farms!

Below is a look at the spices and herbs used in this recipe: Cilantro, Cumin, Oregano and Parsley as well as Chili Powder and I did add some garlic powder.

Combine with yogurt and squeeze in some fresh lime! Again, apple cider vinegar added to the yogurt sauce works well too and adds a nice zest!

When the turmeric cauliflower rice is ready, add to lettuce. I suggest if you lettuce is rather large as these are, to cut them in half before adding everything on. Made for easier eating.

Add slaw, shrimp, yogurt and sprouted greens! I cut up some fresh red onion and placed on top as well! It seems very involved, but trust me, it’s easy! You’re only cooking up the shrimp and cauliflower rice. The rest is eaten raw and simply mixing herbs and spices to the yogurt. You’re a Well-Fed healthy machine! Low-Carb AND High-Nutrition!!!

A bounty of healing Well-Fed nutrition in the turmeric:

Kale, brussels sprouts and cabbage, adding the nutrient dense of cruciferous plants!

While on top, I added sprouted sunflower greens! I picked them up from a local farm, sprouts are a true superfood! Well-Fed high nutrient content being a highly concentrated source of enzymes, vitamins, minerals and other phytochemicals!

Instructions
Turmeric Cauliflower Rice
  1. Shred the fresh cauliflower into pan
  2. Add coconut oil, red onion, turmeric, black pepper and parsley
  3. Allow to cook over medium heat
Cumin Shrimp
  1. Thaw, clean and peel each shrimp and add to pan
  2. Add coconut oil and herbs
  3. Allow to cook over medium heat (can also grill the shrimp outside, first combining herbs to bowl and mixing raw shrimp so to have a seasoning on them)
Cumin Lime Cilantro Yogurt Sauce
  1. Add all ingredients and mix. Using Apple Cider Vinegar is an option if you do not have fresh lime
Kale, Cabbage Brussels Sprout Slaw
  1. Pour into bowl and add herbs of cumin, oregano and parsley if you prefer. You can also add lime juice or Apple Cider Vinegar, or keep as is.
Recipe Notes

Place romaine lettuce onto plates. Add turmeric cauliflower rice, then shrimp, followed by kale, cabbage, brussels sprouts slaw, yogurt sauce and micro greens! Enjoy Well-Fed superfood goodness!
