It’s snowing today and Sneaks’ school has declared it a Snow Day!
So what’s to do besides bundle up in layers and get together outside for some sledding!?!
Snow Day = Pancakes!! My husband picked up Kodiak Cakes Waffle and Flapjack Mix. I don’t really know what a flapjack is except for a funny word, so I go ahead and assume that’s just a pancake. Anyways this mix is made with Whole Grains and has 14g of Protein using just the water recipe! My husband used to make protein pancakes in college! He used regular pancake mix combined with protein powder! They weren’t that good.
What’s great about Kodiak Cake Mix is, for starters, there’s the option to up your protein per pancake by either using milk in place of water, or both milk and egg in place of the water!
And it’s made from 100% Whole Grains! I love the idea of having a healthy pancake, seems like an oxymoron. I always want my food to do work for me! I do a lot of work for my body and my food needs to do the same. I’m not that big of a pancake eater, I go more for the Omelets, but my kids are, so getting them loving these pancakes with more nutritious benefits than regular pancakes is a good achievement. From that same website I found this great chart that helps determine if what you’re eating is actually healthy whole grain! It’s from the blog post titled The Whole Grain Maze because navigating the whole grain options can be a maze!
The ingredients for Kodiak Cake mix begins with 100% Whole Grain Wheat Flour and also 100% Whole Grain Oat Flour. It does have the Whole Grain stamp on the package at the top however that stamp is not the 100% whole grain stamp. If the stamp had the 100% on it, that means all of the grains used in the product are 100% whole grain, but because it does not, it then indicates that some of the grains used to make this product are whole grain, but that there are also some refined grains used as well. Even considering this, for a pancake, it’s still pretty good and the stamp states there’s 36g of whole grains per serving. Ok!!! So now we’ve got our complete snow day meal! Protein, whole grains, antioxidants and minerals! Not to mention the sweet flavor that kids think of when they think of pancakes and syrup, so now, it’s fun times!!
I’ll be honest, I’m not the best at making pancakes. Often they’re just too thin.
But I’ve perfected them, realizing I add too much water. And as if our power pancakes and real maple syrup didn’t already have some great nutritious value, we have to add some blueberries! And some oranges on the side!
Both Kali and Nico love hard-boiled eggs, so why not give the option of more protein, adding a few on the side. This completes our snow day breakfast!
