One of my favorite and pretty easy meals for dinner is pork tenderloin! I’ve figured out how to make it so savoury and juicy with great flavor! In the photo in this blog I accompany it with collard greens, mushrooms and brussel sprouts. Pork has some great nutritional value and it’s a lean cut of meat!
Begin with a great piece of pork tenderloin. Meat that is responsibly-raised making it a healthier option. Pasture-raised pork is the best choice! There is usually two long pieces which I place in a bowl and season with Jake’s Poultry Rub:

Preheat the oven to 400F. Pour a bit of olive oil into a cast iron skillet, cast iron because it’s eventually going to go into the oven. If you don’t have a cast iron skillet, think about getting one. No seriously, I use mine all the time. So if you don’t have one now, be sure to use a skillet that can go in the oven… at 400F! Slice garlic cloves and let toast a bit in olive oil.
Place pork in skillet at medium heat and allow to brown on both sides. This locks in the flavor of the meat while it’s cooking thoroughly in the oven. Be sure not to cook the pork too much on the stove during this, just enough to brown.
Once both sides are browned, place entire skillet in oven and cook for about 15 minutes to 18 minutes. The internal temperature should be 145F.
Depending on your preference, if the pork is still slightly pink in the middle, I take it out and begin serving it at this time. The meat will continue to cook a bit more even out of the oven so if it’s already cooked thoroughly in the oven, it can become dry on your plate.
