WELL-FED Raw Kohlrabi Salad – Cruciferous Cancer Fighter!

In my previous post, I detailed our Saturday night out, having a fantastic organic dinner at Blooming Hill Farm! I have written about this place before, in my I’m all RAMPED Up! post. It’s a beautiful place if you ever have a chance to visit I highly recommend! For being Well-Fed as well as being Well-Defined and even for being Well-Fit! The kids love running around, breathing in some fresh air and soaking in some sunshine! Visitng gets everyone outside!

On a trip there I made sure to pick up some Kohlrabi! Purple and Green!

I was first introduced to Kohlrabi in my very first CSA Farmshare the summer of 2016. Look at my basket full of farm fresh vegetables and fruits!!!

And look at adorable baby-faced Kali! Eating all the strawberries!

And after spreading out my goodies, I saw the Kohlrabi… and had no idea what it was!

After a quick google search, it is more commonly grown in Germany! And is packed with some great health benefits!!! (Image courtesy AbundantHarvestKitchen.com found via Pinterest)

From one of my favorite sites, Draxe.com, the infographic below tells a lot about Kohlrabi!

The most intriguing to me was the phytochemical content of Kohlrabi! Look at this screenshot description from draxe.com

It’s a cruciferous vegetable! More information about such vegetables can be found at whfoods.com After tasting kohlrabi for the first time, I was a fan! It had the crunchy consistency of an apple or a radish, but without the sweetness of an apple or the peppery bite of a radish. It was really perfect! Crunchy, mild and fresh! When I make my way to the farmers market these days, I am always on the lookout for when the Kohlrabi is on display. Here it is! After I enjoyed a really great radish salad at the Blooming Hill Farm Fall Dinner, I wanted to make a similar Kohlrabi salad, but add some apples and maybe avocado!

This salad is so incredibly easy and healthy! The avocado really isn’t necessary! Just slice the Kohlrabi and apples and place over power greens of spinach and kale! Walnuts were a fantastic addition and I simply poured Olive Oil over it all with a dash of oregano and basil! Phytochemically Perfect! Definitely a Well-Fed meal to enjoy!!!

I had some feta cheese I wanted to taste with it, gave it an extra flavor but I didn’t need it for my next kohlrabi salad!
