WELL-FED Egg and Avocado over Sprouted Grain (or Gluten-Free) Toast – Increased Nutrition

This is one of my favorites! It’s easy and delish, from the bottom up it’s full of healthy nutrients!

I topped this with a happy poached egg sprinkled with oregano, sea salt and a dash of fresh squeezed lemon juice.

This is not only my favorite, but Kali loves it as well! She’ll eat more than me!

Happy breakfast, lunch, snack or dinner.

Rather than using a processed white or wheat bread for the toast, you’ll get more vitamins and minerals going with a sprouted grain bread. If you’re keeping wheat out of your eating routines, there are some great gluten-free breads to chose! And tbh, both taste so much better than regular ol’ bread. Angelic Bakehouse has a great website loaded with tons of information and infographics

Unfortunately my local grocery does not sell Angelic Bakehouse products ( I was able to buy them from Whole Foods when I lived in NJ at the Ridgewood, NJ location and in CT at the Norwalk Whole Foods). Locally I pick up Alvarado Street Bakery

Or I also often purchase Food For Life Ezekiel Sprouted Grain Bread which is flourless. It’s found in the frozen section not the bread or organic shelf section. A screenshot from their website shows the benefits of choosing sprouted grain. Increased absorption of minerals and more vitamins as well as antioxidants.

If you want to stay gluten-free, great choices are those offered from Canyon Bakehouse. I have found in the freezer section their Heritage Bread. Amazing gluten-free game changer!

Start with your healthy bread of choice and toast it.

Then simply add a perfectly ripe avocado (which sometimes is a holy miracle itself) and smash it across the top of the toast.

This is where YOUR Well-Fed Well-Nourished creativity comes in. Here, I sprinkle with sea salt, add a poached egg and then squeeze a lemon for an added zest, finishing with a sprinkle of oregano. But the healthy toppings are on-going! Add chia seeds or flax. Skip the egg and add hemp seeds and fresh arugula, watercress and/or raddishes! Created an avocado toast bar at a brunch party where guests can make-their-own! Sliced sweet peppers and baby kale.

Increased health benefits as a lifestyle change! This is an easy way to always be nutritiously well-fed.

  1. Toast the bread. Spread Avocado across toast then add your cooked and prepared egg to top. Squeeze lemon juice over it then add oregano or parsley and enjoy!

  2. I love this breakfast I have this 99 percent of the time. It’s very feeling I only need one slice of toast and one egg half an avocado.

    1. Me too! There are days I have half and my daughter has the other half. Or I save it and have it for lunch! And even adding different herbs and spices changes up the flavor; oregano with squeezed lemon one day. Turmeric and black pepper another!
