WELL-FED Mango Salsa Over Baked Cod – A Nutrient Packed Dinner!

I love fish and I especially love Cod! I love it’s light mild flavor and the way a good piece of Cod fish will flake beautifully when baked. This baked Cod recipe is loaded with nutritional benefits, some obviously coming from the Cod itself, but the added mangoes, red pepper, red onion, tomatoes, cabbage, arugula and avocado… wow! Incredible flavor, superfood packed and now I’m a superhero cook. And so are you after you serve this up!

I like to start with preparing the salsa. Everything will be eaten raw, which allows the nutritional value of the vegetable to be more abundant! Begin by cutting a red pepper, cherry tomatoes and red onion, all deliciously healthy! Place all the cut pieces into a bowl.

There’s no weed in the recipe we’re preparing here, just oregano.  To cut your mango, if you don’t know how I’ll help you out a bit. I had to youtube it myself the first time.

The seed is long and exists right through the middle, so you can’t cut it in half like an apple. Begin by cutting it long ways, going in about 1/3 of the mango, cutting a section off from the side, from top to bottom:

Do same on opposite side.

You can see a little of the seed in the photo, the white part.

Now begin cutting sections into the halves, cutting long ways, then cutting across. Push the skin in so the meat of the fruit pops out, like so…

Then I just begin slicing off the sections into the bowl!

Next add a little Olive Oil, not too much, perhaps about a tablespoon or less.

Next, squeeze some lime juice into the mango and pepper salsa. Do better than I did here, you can see I didn’t catch the seeds.

Toss in some arugula and sliced cabbage for added crunch and flavor. I kept some separate in case someone might not like cabbage.

Then sprinkle with parsley, chili powder and cumin. Just enough to give it a bit of a salsa kick and flavor. Next we’ll continue to use those herbs along with some Oregano and Paprika, so keep them nearby! I’m almost out of Oregano! Good thing we’re only using about a “pinch” here.

Place the fillets on a baking sheet lined with foil. Here is about 1.5 lbs of cod fish.

Squeeze lemon juice and place sliced garlic onto the raw fish.

Sprinkle with parsley and oregano, not too much.

Then paprika if you like it, I only did the larger filet because my son does not like it on his fish. Best. mom. ever.

Bake in oven at 375F for 12-15 minutes. Presentation is everything, so place on plate and scoop salsa over baked cod. Take tons of pics because you just made better-than-restaurant quality baked cod!

Serve with lime wedge and sliced avocado to add zest and healthy flavor!

The kids LOVE it too! I had 1.5 lbs for this meal and had no leftovers except for the salsa. I’ll need 2 lbs of cod next time! Enjoy!
