WELL-FED Greedy with the Greens!

My husband and I have some good appetites! We always appreciate a good meal. I’ve been able to put away food with no problem pretty much all my life. There was a time growing up, when my sister (who many would assume was border-line anorexic because she was rail-thin) and I ordered foot-long subs, one for each of us. There were a group of friends (guy friends) who were convinced there’d be leftovers and were waiting to take them. When one of them said “no way you’re finishing all that” my response was “You’re about to see something extra special!” Nothing was leftover.

So when I cook meals, I make sure there’s plenty of good, nutritious, healthy options. That way our appetites are satisfied and we’re not left wondering the kitchen, looking for “something else” afterwards, but also not feeling disgustingly full. That’s where a lot of greens come in!

I like to begin with a leafy green salad, mesculin, spring mix and some spinach always a good choice!

I add more greens! Cucumbers and broccoli raw! Protein punch! A little color with some red onion gives it a fancy look and a nice kick! Our salad is ready! Add a little oregano, basil and olive oil, perhaps some vinegar too and you’re set! Raw, healthy, filling and no unnecessary added sugars.

Next up is some kale chips! Clean and rinse, then line on baking sheet. Preheat oven to 375F.

Pour a little olive oil and add a bit of sea salt and pepper.

Bake at 375 for about 15 minutes. They’ll come out crunchy with a great flavor!

Kali likes them too! Took her a while to consider them, but she’s a good eater herself!

Next up, collard greens! I have only been cooking collard greens since April when I received them in my CSA farm share:

I had no idea what to do with them but after researching and experimenting, I found many uses and LOVE them! Most evenings they’re included in our meals! A lot come in a bunch! Wash and rinse.

Then I have found it’s easiest if you stack them and roll them up, then cut as if they were a sushi roll!

 

 

 

 

 

 

 

 

 

 

Grab a couple garlic cloves and slice. I am not able to slice as thin as Paulie did while in Prison on Goodfellas but I at least get the garlic decently thin.

Add to skillet with olive oil and sliced onions. Allow the garlic, olive oil and onions to saute for a few minutes until there’s a nice aroma.

Add sliced collard greens and allow to saute over a medium heat. I toss in a little oregano and basil for flavor!

For added green, more healthy food for a healthy appetite, throw in some brocoli!

A lot of greens that go good with a lot of foods! Great side dish or vegetarian meal that will keep you well-fed!
