We had a good stretch of winter return with our blizzard delivering just a bit over two feet of snow and then the days after remaining cold and windy! But we kept at it, playing outside in the frigid sunshine and even during the evenings into the night Sneaks would be out there trekking through the tundra!
It’s the kind of weather that definitely gets the appetite going and I love to make fun comfort food on snowy days for the kids!! They already had some power pancakes and healthier homemade pizza. I wanted to try some superfood energy muffins using mix from the same company I make the protein power pancakes, Kodiak Cakes. I love to have Nico do some of the work when we’re cooking, measuring and reading the instructions. He has fun with it and it helps him learn more with reading some bigger words he’s not usually seeing in the first grade and learning math by baking!
I have to say both he and Kali are some good little bakers!! Messy, yes, but these muffins turned out great! Moist and really scrumptious with some gooooood flavor! I added the shredded coconut on top for a little extra sweet touch!
The ingredients show the mix is made of a superfood blend consisting of whole wheat flour, whole oat flour, quinoa flour, flaxseed and chia seeds.
The whole wheat flour is a much better and healthier option than white flour. Some great information can be found at this site: paulasbread.com It’s where I found the image below, look at the difference in nutritional value comparing whole wheat to simply white flour!
Onto the whole oat flour, this ingredient helps to add a bit of a sweeter taste to any whole grain baked foods and it is a healthier flour to bake just as well as it has it the same nutritional value that oats have, being a significant source of protein, B vitamins, vitamin E, calcium, iron and other healthy minerals! Paleoplan has a good site explaining some nutritional value of whole oat flour, it is in regards to their own flour but still very useful!
The other ingredients that makes these muffins superfood is quinoa flour, which is ground from whole grain quinoa being naturally gluten-free and a complete protein having all nine essential amino acids! Quinoa flour also helps the muffin have a nice moist consistency!
You’ve probably already heard of the nutritious value of flaxseed and chia seeds!
So here we go! Baking up some energy to play!
Adding the blueberries and slight bit of unsweetened shredded coconut makes this already healthier muffin even healthier with some additional nutrients!

Yummmm!!! Is the best place to find these types of food at whole foods? We have an organic isle at Kroger, but not a lot of items.
Yes! Depending on the organic aisle selection, some of these mixes could be offered or something similar could be there that might even be better! My favorite grocery store has a very limited organic aisle but surprisingly everything I like they have. I actually found Kodiak Cake mixes right next to the regular Bisquick in the normal aisle.
