I love Almonds! They’re a great snack raw, roasted or of course coated with dark chocolate. Whole Foods have the best in their Westchester store, organic with NO added sugar! They’re in the self-serve section and they’re so good! Very difficult to not grab a few while I’m shopping! It’s great when something that tastes delicious and is also very healthy! I usually just grab a handful raw, but I am also addicted to almonds roasted with sea salt and thyme. I prefer to roast them myself rather than buying then already roasted because it just tastes better and I like to know exactly what is being added.
Begin with raw almonds. Then in a bowl pour some olive oil over them, not too much but enough to allow the sea salt and thyme to stick to the almonds, then add the sea salt and thyme, as much as you prefer. I like to add a lot of thyme because when it roasts, it adds a nice complementary flavor to the already yummy taste of roasted almonds! You can use fresh thyme or dried.
Simply pour raw almonds into a large mixing bowl, add just a bit of olive oil to coat lightly, nothing too heavy, then add the thyme generously and sea salt. Spread onto a baking sheet, lined with foil or parchment paper.
Then roast at 350F for about 15 minutes.
Keep an eye on them as they can become burnt very quickly! A delicious aroma should begin to fill the air when they’re finished! Let cool and enjoy your delicious healthy snack! Nutritiously Well-Fed! Eat ’em up!
