WELL-FED Collard Green Creativity

You may have read in one of my first posts, Greedy with the Greens! how I love vegetables and how I use a lot of them to fill up during meals. One of my favs is Collard Greens.

I had never cooked with them before I received them in my farm share last year.

Now I make sure I have them all the time! You can find them in the “green section” of your grocery store!

They’re incredibly healthy and just as equally tasty! Some great health benefits can be found here Collard Greens Nutrient Packed! It’s a great way to get a good source of protein, fiber, Vitamins A and K, iron and calcium!

You probably already know about the health benefits of kale; look at the comparison in nutrients of kale to collard greens! Very similar!

My favorite way to serve them is sauteed with olive oil, maybe some onions or mushrooms. Perfect side dish!

They also go great with eggs in the morning! Here I added some arugula and avocado to my breakfast of eggs and collard greens! Ready to attack the day!

They go great cut up and added to any salad! Nice kick of flavor and crunch!

In a recent blog I shared my copycat recipe for Cuban Mojo Citrus Lime Pulled Pork with Horseradish Coleslaw Paleo Style I had some leftovers and made a collard green cuban wrap-up! Soooo good! The collard greens are tougher than just lettuce so they hold like a wrap very well! But it’s best to “blanch” them as they can be tough to digest raw. Do this by taking one collard leaf at a time and hold it with a tongs in hot water. Simmer each leaf about 60 seconds but not too long or it will become flimsy and might rip easily. Take out, submerge in cold water then dry. You can save them, ready to be used as a wrap! Just add some avocado to your other ingredients and you’re the best healthy sandwich/wrap maker on the planet!

We had hamburgers one night when the weather was in the 60s and it felt like spring outside. Collard greens made for a perfect bun-free selection!

Pack some sweet potato and avocado in there and again, you’re impressing everyone!

I also make my own tuna salad at home all the time,  I like to know what’s being put in the food I eat and I like tuna salad not so creamy. I use a paleo mayonnaise I found at whole foods, it tastes perfect!

Wrap/roll it up nicely and there you go! A perfect nutrient packed tuna salad lunch!
