This meal is such a light and nutritiously Well-Fed filling meal! The refreshing flavor of watermelon paired with arugula, basil and scallops is perfect for the warm sunny afternoons as we get into the Summer-like/Summertime days! So much to smile about!
The Watermelon Salsa fuses together the flavors of fresh arugula and fresh basil with watermelon, tomatoes and red onion! Fresh and refreshing! Simply cut and dice up the fresh herbs and arugula along with the watermelon, tomatoes and red onion.
You can add a bit of dried basil if you wish and maybe a bit of cilantro or oregano. Add fresh squeezed lemon and lime, a bit of extra virgin olive oil and sit aside to allow the flavors to blend.

For this meal, I did cook up some quinoa, but it really wasn’t necessary. The scallops and the cooked vegetables along with the watermelon salsa was fine and filling on their own! I ended up not even eating the quinoa on my plate! In addition, the scallops cook rather quickly, so it’s an easy quick meal to create on a busy, beautiful, summery outdoor day!
Simply rinse the scallops. Add a bit of fresh garlic, crushed and place in pan along with a bit of olive oil (or kerrygold butter). Allow to warm over medium heat, then add each scallop. You can sprinkle each with oregano and a bit of black pepper if you prefer. Saute over medium heat for about 3 minutes, allowing them to sear on that side. Then gently flip to other side and allow to sear and cook for an additional 2-3 minutes, not overcooking but enough so the scallops flake with a fork.
