Key Lime Pie with Coconut and Fresh Mangoes – Paleo Style Nutrient-Dense Dessert
A nutrient packed paleo dessert using avocado, pecans, almonds, dates and coconut oil! Fresh Mangoes were added afterward for an extra complimentary flavor!

Ingredients
Nut Crust
Avocado Filling
  • 6 Avocados
  • 6 Limesjuice squeezed
  • 4 Lemonsjuice squeezed
  • 1/2cup coconut oil
  • 2tsp vanillause a great vanilla as this is a raw recipe, you’ll be able to taste a good flavorful madagascar vanilla
  • 1tbsp honeyI used a raw honey I was given as a gift. I think a natural maple syrup might substitute well here.
  • 1tbsp shredded coconutto sprinkle on top
  • fresh mangoesto add while serving/eating/enjoying
Instructions
Nut Crust
  1. Combine ingredients in blender that will chop nuts well or food processor.
  2. Once blended and combined well, pour and spread into a 9″ pie pan and place in refrigerator to harden.
Avocado Filling
  1. Combine all ingredients in blender. Mix until smooth consistency is reached. I liked it a bit lumpy.
  2. Sprinkle shredded coconut on top.
  3. Pour over crust and put back into refrigerator so everything cools together.
  4. I found after having it be cooled in the refrigerator for about 24 hours it had a better flavor to it! Serve with fresh mangoes and enjoy!

Using an original recipe from barerootgirl.com I made a few changes and added mangoes to the final product! Wonderfully nutrient-packed dessert that is dairy and gluten-free while also being Paleo!
